Le Bistrot des Flamands offers you the choice of simple or sophisticated cuisine that combines flavours from home and abroad. The Creole-influenced menu is created and designed by our Chef Marcel Ravin and Executive Chef Lindley Lanappe. Here Marcel Ravin creates refined dishes from fresh seasonal produce and reinvents delicious traditional recipes in simple elegance. Let your mood decide… (€25-35 per person). Correct outfit required.

La Table de Marcel

La Table de Marcel is Marcel Ravin’s signature restaurant. An intimate setting for only 24 covers, here Marcel Ravin brings together local produce, flavours and spices for a sublime, refined menu (€50-80 per person). Correct outfit required.

Le Bolibar

“Le Bolibar” lounge bar offers a spectacular view across Fort-de-France Bay. Its relaxed atmosphere makes it a go-to destination for the island’s trendiest clientèle. Its generous and comfortable lounge areas offer an understated and cosy setting that makes it the perfect place to meet and chat. Here you can enjoy the “Bistrot des Flamands” menu or our special “Quick Bite” menu of delicious, on-the-go meals. The little extra? An elegantly appointed, 360° panoramic terrace.

Kitchen Maestro

Marcel Ravin

With his inventive culinary style, Chef Marcel Ravin directs the activities of the Simon Hotel kitchen through the skilled intermediary of Executive Chef Lindley Lanappe. Marcel Ravin’s career has been one of upward progression. At the age of 17 he left his native home of Martinique, his hospitality qualification in hand. After cutting his teeth at a Michelin-starred Relais & Chateaux hotel in Alsace, he continued to develop his skills and experience in a number of top-end establishments in France. At 25 he returned to the Antilles, where he became the chef of a renowned hotel and was awarded the prestigious Gault-Millau Clé d’Or at the island’s top gourmet restaurant. At 30 he returned to the mainland to further develop his skills, receiving his first Michelin star in Monaco. Recognized today as one of the world’s top chefs, his aim in life is to create food that is full of flavour. He meticulously sources products directly from producers that he insists on meeting in person. He continues to travel the world and remains true to his island roots, drawing on its spices and aromas to create the perfect alchemy using local products, which are given pride of place. It was in July 2015, not far from his home, that he first met the director of the Simon Hotel, who revealed his strong desire to work with him on this ambitious new project. It didn’t take long for Marcel Ravin, as dedicated and passionate as ever, to leave his unique mark on the hotel.

Lindley Lanappe

A young chef from Mauritius, Lindley Lanappe has spent many years learning all the tricks and flavours for creating truly sublime dishes alongside his mentor, Marcel Ravin. This determined and dedicated thirty-year-old has made a name for himself and become Marcel Ravin’s right-hand man. They have both followed atypical careers and the combination of their talents leads to incredible dishes and unforgettable flavours. The new Executive Chef of the signature restaurant “La Table de Marcel” and “Le Bistrot des Flamands” brasserie, he ensures the continuation of Marcel Ravin’s signature style.
